Roots can be used in many recipes and flowers are used as an ornament and can also be eaten. How to Grow Salsify
Sow directly outdoors from mid-spring to early summer. Grow salsify in open soil or in raised garden beds in full sun. Sow seeds around 1cm deep, 30cm(12in) apart in light, well-drained soil rich in organic matter such as compost or manure.
Water regularly, especially in dry spells, and keep soil evenly moist. Fertilisers are optional, but if you want the best results feed with a 5-10-10 fertiliser, lower in nitrogen and higher in phosphorus and potassium, both to encourage a healthy, strong root system.
Keep soil weed-free and if harvesting or growing during or after winter mulch with straw or cover with clothes and fleeces. Roots need around 120-150 days to reach harvest so start harvesting around September onwards. Lift roots carefully with a fork so the roots don’t break.
